Taco Pork Loin, Black Beans and Brown Rice.
What you’ll need to cook with: Skillet and a spoon to stir with.
Ingredients:
Pork loin chops (buy Pork loins in the larger pack, because I can make multiple meats)
1 TBSp Olive Oil
2 1.25 oz Taco seasoning pack (I buy store brand for the savings)
1 medium size onion (Diced)
4 good side mushrooms (Diced)
1 10 oz Ro-tel Original diced tomatoes and green chilies
1 15.25 oz Black beans (I buy store brand for the savings)
4 good side mushrooms (Diced)
1 10oz Steamfresh brown rice (in the freezer department)
Sour Cream
Shredded Cheese
Steps:
Cut 4 Pork Loins into strips
Pour the olive oil into skillet and warm for 2 minutes
Place the strips pork loins in the skillet cook until fully cooked on low – medium heat.
Stir in the taco seasoning pack. ( prepare seasoning on on the back of the package.
Cook until boils
Stir in the mushrooms and onions to pork loin taco seasoning mixture.
Stir in the Ro-tel diced tomatoes and green chilies and black bean on low heat, while rice is being cooked
Prepare brown rice as on package
Once the rice is finished cooking stir rice into the pork lion, mixture.
Cook for another 20 minutes on low stirring so it doesn’t stick to the bottom of your skillet. (Yes, I have that one skillet I’m not ready to give up.)
Serve it topped with Sour Cream and Shredded cheese. You could add chives.
